Cos Cob Author Plans Book Signings At New Canaan Green + Tonic

COS COB, Conn. — Dina Cheney, a Cos Cob resident and author of five cookbooks, has just come out with her sixth, "The New Milks," a comprehensive resource about plant-based, vegan, or alternative milks.

The cookbook includes 113 recipes dairy-free and kosher recipes. Cheney said it was an important book for her to write because, like 65 percent of the population, she's lactose intolerant. Since discovering this a few years ago, she's cut virtually all dairy from her diet and has been preparing and purchasing plant-based milks. 

"I truly fell in love with them — their health benefits, delicious taste, creamy texture, novelty, and variety," she said. "'The New Milks' is truly my baby, a book whose concept I came up with, and whose mission I am truly passionate about."

She explained that there are many reasons to choose plant-based milk or to go dairy-free. First of all, unsweetened plant-based milks are hormone-, lactose-, and cholesterol-free and lower in sugar than dairy milk. And, according to the National Institutes of Health, a bulk of the population is lactose-intolerant. And about two percent of people have a dairy allergy. 

"So, a dairy-free lifestyle shouldn’t be considered niche," she said. "Plant-based milks are also ideal for kosher and paleo diets. Plus, they’re delicious, varied, novel, creamy, and versatile. Many would argue that plant-based milks are also more sustainable than dairy milk."
