CHAPPAQUA, N.Y.When Angelo Tradito, left the family pizza business, Villa Maria Pizza and Pasta in Yonkers, to open his own restaurant in Chappaqua he saw an opportunity to give Chappaqua authentic Southern Italian cuisine for an affordable price.
Tradito, born in Giardini, Sicily, uses his mothers and grandmothers Sicilian recipes at Old Stone Trattoria daily to craft gourmet Italian cooking.
I felt Chappaqua needed a new spice to their town, Tradito said. I thought nice Southern Italian cooking would do well here.
Traditos authentic Italian recipes have caught on in Chappaqua because despite a few pizza joints, there isnt an authentic Italian trattoria, or eatery.
Our cooking is different from their traditional cooking, Tradito said. We specialize in thin crust and Grandma Pies, which are very thin with fresh tomato, olive oil and fresh basil. Its thin and crisp.
One of the keys to the success of Old Stone Trattoria has been its ingredients. Tradito only uses the freshest ingredients in all of his recipes and pizzas.
Twice a week, I go to the market at Hunters Point in Mt. Vernon and get all my vegetables, Tradito said. I like to keep it fresh. I also have a small basil garden for here where I get my basil, parsley, sage, zucchini and squash.
Old Stone Trattoria also offers a diverse menu from signature dishes like old stone baked ziti to delectable desserts like tartufo ice cream and tiramisu.
We think were moderately priced for a really good meal, Tradito said.
